Almost anything you could do with an App (except some humorous graphics) can be done in Excel. The technique to build your app would be to use Excel as your 'prototype', check that your maths and theories work in that format, and THEN transfer it to an App. If you can't use Excel to store your data well enough for you, then use Access (Eugh.... horrid database...... but cheap!) to store your data and let Excel analyse that data..... or do it by hand in Access.
However, the use of an extremely unstable format in a palm-top would be the equivalent of writing your data on toilet paper or 'Kleenex': those two also can 'store data' and are JUST as reliable/permanent as using a hand help App.
Go for the Mychron so you can see what has already been done and how much you can extract. Obviously, your App (for example) won't be storing the actual revs every second..... and that's pretty much essential for reviewing the performance of your engine/kart. Writing another App before you see and test what's already available..... is like re-inventing the wheel...... yup.... you CAN do it...... but why?
