firstly, welcome to the 250 club ;)

are you thinking long or short circuit? On short you're best bet is to go with a Honda CR250 engine (by far the most popular so its easier to beg/borrow/steal parts at the track) on something like an Anderson Maverick, Jade, Cyclone chassis, other makes that people use are ADE, Raider etc but those first 3 are the most popular in my opinion. (I race a Honda CR250 on an Anderson Maverick).
If you want to go long then the above applies to the 250 national class or you can go Div1 with a twin cyclinder 250 but to be honest if you havent driven one before and dont have millions of pounds in the bank (slight exaggeration but you get the pic) I would stick to the 250 national.

As far as running 2 125's is concerned, some people still do but they are the vast minority.
