You should aim for the temp to be between 180 to 195. Anything over 200 is too hot.
If you feel your carb is at optimum settings and you still are going over 200 you need to change something else (not the carb). Could be too much mechanical grip, tyres pressure is too high or engine timing needs a tweek.
Ask your driver if grip is very good and the kart is very easy to drive. This often means you need to reduce grip by reducing grip through the kart setup and/or reducing tyre pressure. Don't bother changing the engine timing at this stage to run cooler, because you would probably loose performce and you need to know what your doing with the timing to be effective.
We almost never had tyre pressures over 22psi, in fact last year in cadets we raced super1 - FKS and everywhere else with the tyres at 14psi and was on the pace always.
