As far as I know Aldi is not a kart dealer :)
If the tyres are going on far enough to only leave a 2mm gap, they must have got past the thin bead that is on the rim.
Once you have sealed the tyre on the rim, the width becomes a little irrelevant.
Put them in a warm place before fitting.
Try using a silicon based product like Mr Sheen and rub it on the inside of the bead and the rim then inflate to seat them.
Reduce the pressure to about 35 and leave overnight in a warm place.
If they don't seat, go out on them at the correct pressure anyway, if they're holding pressure and they should stretch.
Do they seat far enough to fit the bead retainers?
I have seen tyres that pull away from the rim when deflated but are ok when pressurised.
