First note which way the collars face when the cassettes are in the chassis hangers.
On one side you will see two cut outs.
You have to twist the bearing so that the outer edges line up with the cut outs, the beating will then lift out.
That's the easy description, in practice the bearing can be very tight so you may have to put the bearing on the end of the axle and then tap the cassette to get it to start twisting.
Make sure that the bearings you buy are suitable for kart cassettes as they usually have a chamfer on the collar to allow it to pass the edges of the cassette when inserting them.
To reassemble, put the bearing ifully nto the slots in the cassette and start to twist. Make sure you twist it in the direction you want the collar to finish in.
You may need to gently tap the cassette to get the bearing in but don't force anything as you can put a burr on the cassette which makes it almost impossible to insert.
If you've cleaned the cassette inner facing, apply some lubricant to aid insertion.
