David,
For MS speak with Howard (he gave you his card I think - he normally has a ready source of new and older chassis). For 7Kart & Wright speak with Adam above as I know he has more karts in his garage than he knows what to do with otherwise keep an eye out on the Market Place on this site.
RPM - good choice. These will be good out of the box. There are 2 schools of thought with running them in, however. You have read the sensible one and as you have paid good money for brand new engines that you want to last. The other is to rev the knackers out of them from the very first outing (over gear it even). I have done both - the latter being on the advice of a prominant engine builder whom you have experience of. You won't get any instructions in a box but phone Rog/Paul and ask them what they recommend.
Black screw is the throttle stop. The brass screw (if you can adjust it - most have a tab these days) should be 2-2.5 turns from fully in. It is an air screw but don't worry if yours are tabbed it will be correct. otherwise you really don't need to worry about the carb other than keeping it clean.
Oil fillers give access to the one and only crankcase - we all tend to use the front one. You only need 425-450mm of oil - some run even less.
Not used the cheap clutch - only ever used the Magums in recent years.
Standard unleaded works fine - just make sure you use a garage that is well used so the fuel is fresh.
